We're thrilled to welcome two of Burgundy's most exciting young producers in Arnaud Baillot and Joannes Violot-Guillemard for a night of in-depth tasting, discussion, and exploration.
Establishing his roots in Beaune, Arnaud Baillot has been making wine since obtaining his Master’s in Business in 2013 and purchasing his first vineyards in 2017. Arnaud and his wife Laure, the granddaughter of the founder of Hudelot-Noëllat, showcase their passion for the diversity of Burgundy with a beautiful range of wines across the Côte-d’Or. Arnaud takes a very hands-on approach in the vineyards and in the cellar alike, and is not afraid to take chances in his winemaking. He started incorporating the use of concrete eggs for élevage, which furthered his ability to achieve impressive purity and precision in his wines. Arnaud’s “blank slate” affords him the opportunity to be creative, to avoid being pigeonholed by a single appellation, and to craft his own family history, a position he has embraced well and achieved great things in a very short time.
Violot-Guillemard is a hidden jewel in Pommard that has been producing wine since 1880, and a champion of organic farming practices since 1999. In 2016, Joannès Violot-Guillemard took over responsibility of the family’s 8 hectares from his father, Thierry. Since his first vintage, Joannès has continued his father’s focus on sustainable vineyard practices, while making some big changes in the cellar, which has garnered him serious recognition. Joannès speaks of the small changes he has introduced: “From 2019, we retained a higher proportion of whole bunches in the red wines than in the past, and I decided to rack the reds from barrel before the autumn”—to draw more purity out from his impressive range.
